Roma Tomato Fish

Hello World!  How is everyone on this lovely Friday?  Do you have big plans for the weekend.  I have a naughty secret to tell you.  My weekend will be filled with taking down the upstairs Christmas decor.  You heard me right.  The downstairs Christmas decor has been taken down and put away for some time.  The downstairs has been rearranged and cleaned.  The upstairs decor I haven't really touched.  Bad girl!  

Today, I want to share with you a fish recipe that I tweaked.  We love fish, but as with chicken sometimes I run out of different ways to fix it.  Here is my little recipe for:

Roma Tomato Fish
Ingredients:
Fish, your choice
Lemon juice
Fresh herbs (I used a little Italian seasoning for this dish)
Minced garlic
Vinaigrette dressing, your choice
Roma tomatoes, sliced

Directions:
In one bowl combine the lemon juice, herbs, and garlic.  In a separate bowl pour in your vinaigrette dressing.  Dip the fish first in the bowl with the lemon juice coating well.  Next, dip the fish in the vinaigrette dressing, coating well.  Place coated fish in a baking dish lined with foil.  Place the roma tomatoes on top of the fish.  Tent the foil and bake at 325°F until done.  

For the above dish, I used some Swai that I had in the freezer.  I haven't made it with salmon yet, but I'm sure it would taste fantastic.  A little party in my tummy!

  2. I love fish, but for some reason I don't make it very often. Your recipe looks soo good, I'm going out to buy the ingredients to make it. I've never tried Swai. I'll check it out. Thanks for the recipe, I'll bet it would be good with chicken, too.
